Grits Casserole

Ingredients

1 c. uncooked grits (old-fashioned or quick)

2 T. butter

2 T. olive oil

1 clove garlic, finely chopped

1 1/2 c. grated cheddar cheese

salt and pepper to taste

Directions

Cook grits as package directs.
Meanwhile saute the garlic in butter and olive oil.
When the grits are done, stir in the oil mixture and the cheese.
Season to taste.
Pour into an ovenproof dish and bake at 350 degrees for 30 minutes.

Notes

This is a great potluck dish. Kids love it. For a livelier dish, serve with salsa.
